On the third day of TCF 2025, we brought “flavour in the glass” back to “everyday dining”. Amid the relaxed atmosphere of the closing brunch, Kweichow Moutai and Sinocan Supply Inc. built locally fitting pairings around three paths — highball sparkle, crisp acidity and layered aroma — with a low-to-medium-proof selection at the core. We believe a great spirit belongs not only to late-night bars, but should walk alongside laughter, sunshine, family, friends and food; when sauce-aroma met smoked salmon, eggs Benedict and maple pancakes, floral-fruity met nutty, creamy met grainy in a gentle yet firm handshake on the palate.

Our pairing philosophy follows twin principles of “flavour complement and structural echo”. A Moutai highball carrying notes of citrus peel and toasted grain greeted brunch’s first sip — fine bubbles and crisp acidity cleansing the palate to meet the richness of egg and dairy; light spice and returning sweetness cared for smoke and savouriness, giving fish and seafood a brighter outline; and a closing short pour or low-alcohol sweet sip carried the aromatic trail of dessert and coffee. These pairings were never about “masking” sauce-aroma, but about letting it be seen, appreciated and remembered in a broader culinary context.

Table socializing is a more enduring form of cultural communication. Unlike professional classrooms, it builds trust with warmth; unlike public galas, it settles memory with detail. We told stories of origin, craft and flavour maps in concise menu language, guided drinking order and rhythm with friendly tableside words, and gave first-time guests a replicable good experience. We also valued responsibility and inclusiveness, preparing non-alcoholic and low-alcohol parallel options for different preferences and drinking habits, so every guest could join and enjoy this dialogue of taste.

As brunch drew to a close, the three-day journey completed its loop: day one built interest and affection, day two built knowledge and method, day three settled habit and occasion. Kweichow Moutai’s expression in Toronto was no longer just “available locally” product information, but a complete ecosystem — locally usable, teachable and enjoyable; Sinocan Supply Inc. likewise upgraded along the service chain, growing from importer to cultural translator and occasion co-creator. Going forward, with more open collaboration, more systematic training and more life-oriented product innovation, we will keep placing this Eastern fragrance from the Chishui River valley onto Canadians’ everyday tables and into their good lives.
