October in Calgary; November in Edmonton. Sinocan Supply Inc. once again appeared at Alberta’s Rocky Mountain Wine & Food Festival \u2014 with a delightful surprise. This time, Sinocan Supply Inc. presented a series of Chinese baijiu brands across aroma styles \u2014 Moutai, Wuliangye, Yanghe, Langjiu, Kongfujia, Dukang and Jiugui \u2014 alongside sake, fruit wine and whisky represented by Chiyogen under its S.C.Wine portfolio, creating the most distinctive Asian spirits corner. Through a tasting experience blending professionalism with fun, we invited Canadian food lovers to understand Asian spirits’ history, craft and contemporary lifestyle through taste and story \u2014 bringing Asian drinking culture more naturally to Canadian dining tables.<\/p>

Starting from Flavour: Chinese Baijiu’s ‘Aroma Map’<\/strong><\/p>

Chinese baijiu is not a single-flavoured spirit, but a complete brewing system speaking the language of grain, qu, fermentation pits and time. Sorghum, wheat, rice and corn each have their strengths; solid-state fermentation and distillation build layered bodies. At this year’s Rocky Mountain Wine & Food Festival, we hoped Canadian consumers would grasp baijiu’s diversity through “taste”: the weight of sauce-aroma, the roundness of strong-aroma, the complexity of mixed-aroma, even the much-watched fuyu-aroma of recent years \u2014 each strikingly distinct in flavour.<\/p>

To help guests understand baijiu, we used a “three-step method” on site: first smell \u2014 identifying grain, qu and fermentation notes; then a small sip, letting sweet, spicy, bitter, astringent and umami unfold across the tongue; finally a deep breath, or water as a control, to feel the finish stretch and circle back. Every bottle also carried an aroma guide and flavour card, helping guests locate baijiu on familiar taste coordinates \u2014 a concise, clear window into its profound charm for first-time tasters.<\/p>

Using Western Drinking Habits as a Bridge: Finding Cultural Common Ground in Taste<\/strong><\/p>

Our baijiu spanned sauce-aroma, strong-aroma, mixed-aroma and fuyu-aroma styles \u2014 and to help Canadian consumers of different backgrounds and drinking habits approach baijiu more naturally, we designed “recommendation paths anchored in Western drinking habits”:<\/p>

For whisky lovers, we highlighted sauce-aroma or fuyu-aroma baijiu \u2014 full-bodied and long-finished, building layered experiences among nutty, caramel, fermentative and grain-umami notes, sharing common ground with whisky’s familiar barrel and malt character, and thus easier to appreciate for complexity and the value of “slow sipping”;<\/p>

For drinkers favouring vodka or other neutral spirits, we more often recommended strong-aroma or mixed-aroma baijiu \u2014 smooth on entry, full yet unforced in aroma, gradually revealing baijiu’s character with a light opening and well-extended finish: strength retained without a steep shock to the palate, an ideal first step into baijiu;<\/p>

Meanwhile, many visitors were keenly interested in baijiu culture but hesitant about its high proof. For them, we prepared baijiu cocktails built on Yanghe Daqu \u2014 extending Western bartending logic to fold baijiu’s aroma into more familiar sour, sweet and bitter structures, letting “strong spirits” be accepted more gently. From fruity to citrus, floral to herbal, every flavour kept baijiu’s soul while opening the door more lightly. This not only shortened the distance between baijiu and new drinkers, but helped Western bartenders better understand baijiu’s performance in a cocktail context.<\/p>

Through this “flavour resonance” approach, baijiu’s complexity feels less distant, naturally connecting with each audience’s taste experience. We hope to build a true bridge of cultural exchange \u2014 not simply “introducing baijiu”, but starting from the drinking systems people already know, letting them meet baijiu inside their own understood world of taste. This “other-as-starting-point” approach turns baijiu from a strange Eastern spirit into a cultural experience that can be appreciated, woven into daily life and given personal meaning. As more Canadian consumers grow willing to try and to talk, we believe baijiu will become more than a drink \u2014 a bridge connecting cultures, memories and taste imagination.<\/p>
